Turkish Eggs with Whipped Feta

Ingredients:

For Whipped Feta:

  • 1/4 cup plain Greek yogurt
  • 6 ounces feta cheese

For Turkish Eggs:

  • 1/3 cup olive oil
  • 1 clove garlic, minced
  • 4 large eggs
  • 4 cups arugula & baby spinach mix
  • 1 cucumber, sliced thin
  • 1 teaspoon crushed red pepper flakes
  • 2 Tablespoons salted butter
  • 1/2 teaspoon paprika
  • 1 cup mixed herbs (cilantro, basil, dill, parsley, etc.)
  • Juice & zest from one lemon
  • Salt & pepper to taste
  • 1 avocado, sliced

Instructions:

  1. Make the whipped feta: In a food processor, add the Greek yogurt and feta. Pulse together until it becomes creamy. Add a pinch of black pepper if desired.
  2. Make the chili butter: In a saucepan, melt together the butter, crushed red pepper flakes, paprika, and 2 Tablespoons of olive oil. 
  3. Heat a skillet over medium heat and add 3 Tablespoons olive oil. Once the oil is heated, crack the eggs into the pan and fry to desired consistency. Once they are cooked, add them to a plate.
  4. Using the same skillet, add in 1 Tablespoon of olive oil, garlic and arugula and baby spinach mix. Season with salt and pepper, and cook until they become wilted, about 3 minutes. Remove from the heat and add the lemon juice, lemon zest, cucumber, and herbs. Toss everything together.
  5. To serve, add the whipped feta to the bottom of each plate then top with wilted greens, eggs and avocado. Spoon the chili butter over the top.
  6. Enjoy!
