  1. CELERY ROOT:
    • AKA Celeriac
    • Abundant in Vitamin K
    • Helps to lower cardiovascular risk
  2.  ACORN SQUASH: 
    • Shaped like an acorn
    • Yellow-Orange flesh
    • Tastes like black pepper and hazelnuts
    • Rich in beta-carotene; which is a precursor to Vitamin A
  3. TUSCAN KALE:
    • AKA Dinosaur or Black kale
    • Long, spear-like leaves
    • Does not have a strong bitter flavor, but more sweetness
    • Cruciferous vegetable-has sulfur compounds that have antioxidant and anti-inflammatory benefits
  4. CRANBERRIES: 
    • Fresh ones exist in the fall/winter season
    • High in anthocyanins and flavanols
    • Benefits heart and brain health
  5. SWEET POTATO:
    • Sweeter than white potatoes
    • Rich in antioxidants
    • Contain Vitamin A, Vitamin C, Potassium, Magnesium and Manganese
  6. PARSNIP:
    • AKA Carrot’s Cousin
    • Has a nutty and earthly flavor
    • Rich in Vitamin C, Vitamin K, Potassium and Folate
    • Very high in fiber
