Veggie Breakfast Skillet

INGREDIENTS:

  • ½ cup thinly sliced sweet onion
  • ½ cup chopped celery
  • ½ cup chopped red, yellow, orange, or green bell pepper
  • ½ cup store-bought precooked lentils
  • 2 whole tomatoes, diced
  • 1 clove garlic, minced
  • 4 organic, pasture-raised eggs

Optional toppings:

  • Microgreens such as micro broccoli, micro arugula, or sprouts
  • Freshly cracked black pepper

PREPARATION:

  1. Prepare all your chopped vegetables: sweet onion, celery, and bell pepper. In a nonstick sauté pan, heat two tablespoons of olive oil over medium heat. Add the onion, celery, and bell pepper. Season with salt and pepper. Sauté for 5 minutes until the vegetables begin to soften.
  2. Add the minced garlic and diced tomatoes to the pan. Cook for another 3-4 minutes, stirring frequently, until the tomatoes begin to release their juices.
  3. Stir in the precooked lentils and let the mixture simmer for 10 minutes, allowing the flavors to meld together and the sauce to thicken slightly.
  4. Using the back of a spoon, create four small wells in the tomato-lentil mixture. Gently crack each egg into a well. Cover the pan with a lid and cook for 2-4 minutes, depending on how runny you like your eggs.
  5. Carefully transfer the eggs and sauce onto plates. Top with fresh microgreens and a sprinkle of freshly cracked black pepper for an extra burst of flavor.
